Fresh Cheeses
Unripened, moist and quite soft, with a high water content. Those made from cow's milk tend to be mild in flavor; goat and chevre milk cheeses have stronger flavors. We offer three varieties of Feta, Queso Blanco, and fine Chevre cheeses.
Soft Cheeses
Brie has a soft, creamy interior with snowy white edible rind. Limburger has an earthy pungent flavor increasing in intensity with age. We offer both cheeses.
These cheeses are sweet and mild, buttery and creamy. They are difficult to grate. We offer brick (aged brick, two flavors of Havarti, Muenster, Edam, Farmer's (lower fat and salt), Colby, Jack and Jill, butterkase, and raclette.
Wines: Chardonnay, Fume Blanc, Riesling, Pinot Noir, and Gewürztraminer.
Hard Cheeses
Drier and firmer than semisoft and aged for varying lengths have time. Can be sliced and grated. We offer eight varieties of Cheddar, four varieties of Swiss, 8 varieties Monterey Jack, Gouda and smoked Gouda, Provolone, Gruyere, and Emmenthaler

Grating Cheeses
Hard, with crumbly texture and ripened for various lengths of time. Hard to slice; best grated. We offer Pepato, Parmesan, Romano, Asiago, and Sapsago (a Swiss grating cheese - grassy and herbal in flavor).
