1 pkg Carr Water Crackers (or could use sliced French bread rounds)
1 small log fig Chevre
8 figs chopped, and soaked in honey water (should I bake this, too?)
2 slices prosciutto (optional), shredded and at room temperature
Preheat oven to 350 degrees. Bake log in a small baking dish until lightly browned on top.
Spread 1-2 tsp of cheese on each cracker, lightly sprinkle with a few pieces of fig, top with 2-3 shreds of prosciutto, and drizzle lightly with honey. Serve immediately.

Festive Holiday Greens Salad
5 oz mixed spring greens
1 small log Cranberry Chevre, crumbled
1 small package raspberries, sliced strawberries, or candied cranberries
Sugar Spiced nuts (optional)
¼ bottle Pomegranate raspberry dressing or similar
Candied Cranberries:
2 cups fresh cranberries, washed.
1 Cup sugar
Candied Cranberries: Spread cranberries in a baking dish and sprinkle sugar on top. Cover with foil and bake 1 hour, stirring occasionally. Cool before using.
If using candied cranberries, serve mixed with cranberries dollopped on top.
Spinach Braid
1 pkg puff pastry, thawed
1 Low Fat Ricotta Tub, Drained of excess juice
4 oz Feta w/ Herb Cheese, crumbled
1 pkg Frozen Chopped Spinach, thawed
1 T minced Garlic
1 Small onion, chopped and sauteed in olive oil until soft
Combine all ingredients. Enough for two braids. Bake until golden.
Spinach Egg and Hashbrown Pie
Crust (combined and pressed into bottom of greased pie dish):
1 pkg simply potato shreds
1 egg white, beaten
¼ C shredded Parmesan
Pepper to taste
Filling:
½ med. Onion, chopped, sautéed in 1 T Olive Oil until translucent
1 T minced garlic
1 container egg whites
1 egg yolk (from egg above)
1 pkg thawed spinach & artichoke dip
¼ tsp pepper
Topping: ¼ C Parmesan or Asiago
Bake Crust in 350 oven until lightly browned. Pour egg mixture into crust. Top with shredded Parmesan. Bake at 350 until puffed (about 30 min)
