Maytag Blue

Cave aged creamy blue-cheese from the Maytag Dairy in Iowa.  Maytag Blue comes from the milk of award-winning Holstein-Friesian cows.   Wonderful aqua blue marbling set against bone-white paste. Perfect with celery, carrots, olives and beef tenderloin!  Will produce a heavenly blue-cheese sauce in it's own rite.  This is our favorite Blue and sure to be yours, too!  Serve with Light Reds and Whites.

Appenzeller
Tasty cheese with a mature, tangy flavour from the Appenzell area.
This fine semi-hard cheese can be identified by its yellowish- to reddish-brown rind and the regular, medium-sized holes. Its unique flavouring is achieved with loving care using a secret blend of herbal ingredients; a carefully guarded centuries-old recipe. Cheese connoisseurs appreciate it around the world.  This cheese is available during the Winter months and by request.

Braun Suisse Käse

Award winning cheeses from Green County made exclusively from the rich milk of registered Brown Swiss Cows.  The texture and flavor of these cheeses are different from those made with other cows’ milks and are distinctive for their creaminess and silky-soft texture.

In only three years judges in major national competitions have awarded Braun Suisse Kase the following prizes:

Deppeler's Baby Swiss

This all-time Green County favorite took 1st place in it's category at the 2002 American Cheese Society judging, Deppeler is our staff's favorite maker of Baby Swiss. A medium-firm white cheese, with the traditional holes or "eyes". The flavor is rich, sharp, and nutty. It pairs beautifully with a light fruity white wine such as Sauvignon Blanc.

Butterkäse

Butterkäse originated in Germany and is made throughout Germany and Austria. Its name literally means "butter cheese", named for its buttery texture.  The Butterkäse produced in Wisconsin is made in the Alpine tradition.  This cheese is very creamy and mild in flavor. A German snacking cheese loved by all!  It is also one of the best melting cheeses, adding luscious flavor and texture to sandwiches, vegetables, hamburgers, you name it!  7.50 lb (1 lb block), 8.03 per lb (½ lb block)

Colby

Limburger
Made only in Wisconsin.  Full earthy flavor.  Pungent aroma.  Ripens with age, getting softer and more flavorful.  Often served on Rye bread with onion slices.

Famous world champion Odyssey Feta Cheese made from cow’s milk.  Crumbly firm texture, tart salty flavor.  Crumble on salads or use in stuffings or casseroles.  Lower in fat than most cheeses.  We offer the following varieties:  plain, pepper, tomato and basil, and Mediterranean herb.  All are sold at 6.89 /lb in ½ lb blocks.


Black River Blue Cheese

Imported from Switzerland.  This is a favorite green grating cheese.  It gets its unique color and slightly sharp taste by the addition of clover.  A unique dressing can be made by combining one cup of mayonnaise, the juice of half a lemon, and grated Sap Sago to taste.  $7.29 / cone

Lactose Intolerance and Aged Cheese:

Traditionally made hard cheese (such as Swiss cheese) and soft ripened cheeses typically contain less lactose due to the fermentation and aging which consumes lactose.  After 3 weeks, there is virtually no lactose remaining in artisanal versions of these cheeses.  Commercial cheese brands, however, are generally manufactured by modern processes that do not have the same lactose reducing properties.
